"There is a Cure for Diabetes" by Dr. Gabriel Cousens
I recently bought Dr. Gabriel Cousens' book "There is a Cure for Diabetes." This book is very powerful and thorough. I must admit I kind of skimmed through the first half because it gives a very comprehensive and historical overview of the World's pandemic of type 2 diabetes. While interesting, I was more interested in the later parts of the book that applied to me, curing diabetes through proper eating. I was interested in the raw recipes!
Wow, was chapter 6 for me. It is called the "Culture of Life Cuisine" and there almost 80 pages of information on setting up the proper raw food kitchen, nutrition, and of course raw recipes. My favorite recipe is the Hummus:
3 cups of cooked garbanzo beans.
2 cloves of garlic, optional.
6 tablespoons of lemon juice.
2 tablespoons of sesame oil.
2 tablespoons of minced dill weed.
1 tablespoon of ground cumin seed.
1 teaspoon of salt.
1/8 teaspoon of cayenne.
Combine all ingredients in a food processor until smooth and serve with raw vegetables, flax crackers, or on salads. 2 servings. Delicious!
There are so many other good recipes and it was nice to hear from a doctor and pioneer in raw food that it is OK to cook some ingredients in a raw food lifestyle.
