Dr. Joel Fuhrman's "Eat for Health"!

I have Dr. Joel Fuhrman's excellent book "Eat for Health" in my collection. This is the book that got me started seeking nutrition as a way to cure myself of diabetes. Prior to this book I was taking my daily meds, exercising when I felt like it, and pretty much eating what I thought was healthy, but not really looking into nutrition too deeply. I highly recommend this book. The book comes in a two volume set. The first part is called "The Mind Makeover" while the second is called "The Body Makeover".

"The Mind Makeover" portion of the book gives the background about nutrition, eating habits and how to change them for the better, as well as other educational studies related to nutrition and fending off disease and unwanted weight. There is even reference to The National Cancer Institute's studies showing that when consumed in enough quantity raw vegetables have the most powerful anti-cancer properties of all foods. "The Body Makeover" portion of the book deals with meal planning and recipes. It is very clear and concise and will get you on the right track as it did me.

Dr. Joel Fuhrman's is THE book to buy if you are transitioning to Raw, or are going to eat between 50 and 80% Raw. If you are interested in eating up to 100% Raw Vegan, go with Dr. Cousens book on the next page. You will not be disapointed with either!

One of my favorite recipes from Dr. Fuhrman's book is the Cinnamon Fruit Oatmeal.

INGREDIENTS

1 Cup of water.

1 Teaspoon of vanilla extract.

1/4 Teaspoon of cinnamon.

1/2 Cup of old-fashioned rolled oats.

1/2 Cup of blueberries.

2 Apples, chopped.

2 Tablespoons of ground flax seeds.

1/4 Cup of raisins.

DIRECTIONS

In a saucepan, combine water with the vanilla and cinnamon. Bring to a boil over high heat. Reduce the heat to a simmer and stir in the oats. When the mixture starts to simmer add the blueberries. Remove from heat when berries are heated through. Cover and let stand for 15 minutes until thick and creamy. Mix in apples, nuts, flax seeds and raisins and enjoy!
