It is a known fact that to change any habit requires about 30 days of consistent effort before it becomes daily routine. Lets make a commitment to each other to start 2 new habits today. Let’s eat better and exercise more. By month’s end we will be living our 2 new healthy routines. We'll have energy to burn and live the best new year of our lives!

THIS MONTH'S RECIPE

New Year Power Salad!

1 oz. pine nuts

3 oz. organic baby spinach

1 medium red ripe tomato (remove stem and core)

1 medium sweet red pepper (remove stem and core)

1 medium avocado (peeled and pitted)

1 Tbsp extra virgin olive oil

Black pepper

Dice into ½ inch cubes all the ingredients except for the spinach, pine nuts and olive oil. Divide the spinach equally into two glass serving bowls. Add diced colorful mixture of the rest of the ingredients over the spinach. Drizzle ½ of the olive oil over each salad and sprinkle black pepper on top (to taste). Chill in refrigerator. Enjoy!

Serves 2. Each serving contains:
