I hope everyone is enjoying the spring. This is a great time of year to eat more raw and vegan, light yet healthy. The winter holidays are behind us, the sun is out and we can get active as well!
THIS MONTH'S RECIPE
1 15.8 ounce can black beans, drained and rinsed
2 cups mango, diced
1 cup sweet red bell pepper, diced
6 green onions, thinly sliced
1/4 cup cilantro leaves, chopped
1/4 cup fresh lime juice
1 tablespoon olive oil
1 seeded Jalapeno pepper, minced or hot sauce to taste
Serves 4. Serve in individual bowls or for some cruch serve on concave and crisp romaine lettuce leaves. Enjoy!
